In 2015 the Pálffys managed to find and rent a fairly large, 10 hectare lot with 4 hectares of Olaszrizling vines. They immediately switched to the same ecologically minded farming that they’ve been practicing in their own vineyards for many years now. This is the hottest plot in the whole Káli Basin, so finding the optimal harvest date requires extra care and attention. In each year this is where the harvest begins by late August or early September. The grapes were manually harvested and pressed without destemming. Like with all their wines no added yeast was applied for the fermentation. 50% fermented in temperature controlled tanks and 50% in barrels. Before bottling the wine was aged on its fine lees for 10 months.
